I wanted to create a dish that was light enough for the warmer weather we've been enjoying yet I still wanted to hang on to winter, like a confused groundhog. Here I treated striped bass like red meat seasoning it with cracked pepper and pairing it with chantrelles, bacon, onions, potatoes, hollandaiseand lots of thyme.

Steak Frites for Fall
This is an eye of rib-eye with sweet potato frites, brussels and malt vinegar hollandaise finished with fresh grated cinnamon.

Surf 'N' Turf


This is a recent feature dish I did and it sold like crazy! It is a Maine lobster tail poached in vanilla butter and a pan seared flat iron steak as the two main protiens. Along with the protiens I put a smooth parsnip puree, sauteed asparagus and two sauces(peppercorn demi and vanilla-citrus hollandaise).
